12 small | Bamboo skewers | |
2 tbsp | Pastene Extra Virgin Olive Oil | |
9 | Pastene marinated mushroom caps, quartered | |
1/2 lb | sea scallops | |
1 jar (7oz) | Pastene Roasted Peppers, cubed | |
1/2 cup | Pastene Italian Flavored Bread Crumbs | |
1 1/2 tbsp | lemon juice |
Directions
- Soak skewers in water for 10 minutes. Preheat the oven to broil.В
- Heat olive oil in a skillet over medium heat and cook mushrooms for about 4 minutes.
- Thread scallops, mushrooms, and peppers cubes on skewers. Brush with lemon juice and olive oil, sprinkle with bread crumbs.
- Place on a broiler pan and place at 2 inches from the hot broiler element. Broil for about 4 minutes, turn after 2 minutes. Serve with lemon wedges.
